做法:春(chūn )笋切成片(piàn )后加少许盐(yán )捞出(chū )后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
