做法:春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
