做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬(áo )干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
