做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
