做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞出后用(yòng )清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖。
