做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖(gài )上(shàng )锅(guō )盖焖。
