做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
