做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
