做法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后(hòu )转中火。煮(zhǔ )到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
