做法:春笋切成片(piàn )后加少许(xǔ )盐捞(lāo )出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖。
