做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大(dà )火煮开后(hòu )转中火(huǒ )。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
