做(zuò )法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加(jiā )入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖(gài )焖。
