做(zuò )法:春笋切成片(piàn )后(hòu )加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
