做法:春笋切(qiē )成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均(jun1 )匀(yún ),加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
