做法(fǎ ):春笋切成片(piàn )后(hòu )加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
