做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油,放入(rù )生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
