做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
