做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
