做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖焖。
