做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左(zuǒ )右(yòu )。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均(jun1 )匀,加(jiā )入(rù )少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
