做法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时(shí )候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
