做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半(bàn )掩(yǎn )住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖(gài )上(shàng )锅(guō )盖焖。
