做法:春笋切(qiē )成片(piàn )后加少许盐捞(lāo )出后用清水浸泡(pào ),生(shēng )姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
