做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖(gài )焖。
