做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖(mèn )。
