做法:春笋(sǔn )切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
