做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖(gài )焖。
