做(zuò )法:春笋(sǔn )切成片(piàn )后(hòu )加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
