做法:春(chūn )笋(sǔn )切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的(de )时(shí )候加入盐,翻炒均匀(yún )稍收(shōu )汁时(shí )盖上锅盖(gài )焖。
