做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快(kuài )熬干(gàn )的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
