做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半(bàn )掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
