做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入(rù )生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量(liàng )清水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖(gài )焖。
