做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后(hòu )用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。
