做法(fǎ ):春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖(gài )焖。
