做法:春笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上(shàng )锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻(fān )炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
