做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖(mèn )。
