做法(fǎ ):春笋切成片后加(jiā )少许盐捞(lāo )出(chū )后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅(guō )盖焖。
