做(zuò )法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火(huǒ )煮开(kāi )后转中火(huǒ )。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖(gài )焖。
