做法:春(chūn )笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
