做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再(zài )加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖(mèn )。
