做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后(hòu )转中火。煮到(dào )水(shuǐ )快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖(gài )上锅盖焖。
