做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
