做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋(sǔn )、牛(niú )肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
