做法:春(chūn )笋切成(chéng )片后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮(zhǔ )到(dào )水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
