做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半(bàn )掩住(zhù )春(chūn )笋(sǔn ),盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
