做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
