做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到(dào )水快熬干(gàn )的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
