做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
