做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖焖(mèn )。
