做(zuò )法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后(hòu )转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
